Beets And Horseradish Meal

2 large beets with greens, scrubbed and root ends trimmed
1 cup water, for steaming
2 tablespoons sour cream
1 tablespoon whole milk
1 teaspoon prepared horseradish
¼ teaspoon lemon zest
1/8 teaspoon salt
2 teaspoon unsalted butter
1 tablespoon minced fresh chives
How To
Trim off beet greens and keep them on the side
Add water to the Instant Pot and place steamer basket, place beets in a steamer basket
Lock lid and cook on HIGH pressure for 10 minutes, release pressure naturally over 10 minutes
While the beets are being cooked, wash greens and slice them into ½ inch thick ribbons
Take a bowl and whisk in sour cream, horseradish, lemon zest, 1/16 teaspoon of salt
Once the cooking is done, remove the lid and remove beets, let them cool
Use a paring knife to peel them and slice them into large bite-sized pieces
Remove steamer from the Instant Pot and pour out water
Set your Pot to “Saute” mode and add butter, let it melt
Once the butter stops foaming, add beet greens sprinkle remaining 1/6 teaspoon salt and cook for 3-4 minutes
Return beets to the Pot and heat for 1-2 minutes, stirring
Transfer beets and greens to a platter and drizzle sour cream mixture
Sprinkle chives and serve
